1 large courgette (300 gr)
1 long eggplant (same size as the courgette)
4/ 5 Peretti tomatoes
1 yellow horn-shaped pepper
1 or 2 small white onions
2-4 tbsp of oil
Bauer Arostina Herbs & Spices
50 g of string cheese
Wash and clean the vegetables.
Cut them into thin slices (1/2 cm) of the same size.
Put all the vegetables into a bowl and season with 2 tbsp of extra virgin olive oil and Bauer Arostina Herbs & Spices.
Take a non-stick pan with lid.
Drizzle 2 tablespoons of oil on the pan bottom and arrange the vegetables in this order:
onion, courgette, eggplant, tomato, pepper
Repeat until you reach the outermost circle, then start another circle next to it, and drizzle a tablespoon of oil on the pan bottom.
Once the pan is filled with vegetables, place some cheese slices.
Put over heat, cover and start cooking.
Cook at medium heat for approx. 15 minutes.
